Coming from a Russian background, we have buckwheat for breakfast quite often. I’ve been using it for practically everything because it’s texture resembles all-purpose flour so beautifully. Bring to a boil, lower the heat to medium-low and simmer, stirring often, for about 10 minutes or until the porridge has thickened. It seems to me that buckwheat is extremely under-appreciated, which is surprising because it really is a nutrient-rich powerhouse. Buckwheat Porridge. Blend the buckwheat very shortly with a handheld blender, about 5-6 pulses are enough, the buckwheat should still have a coarse texture. It’s like magic!
